Coffee Carbonara

A carbonara recipe with a deep taste of coffee and parmesan and a fresh spring addition of asparagus.

  • 1/2 cup milk
  • 1/4 cup Italian roasted ground coffee
  • 5 slices of bacon cut into thin strips
  • 1/2 pound spaghetti
  • 1 bunch of asparagus cut in half from the long woody stems removed
  • 1 egg
  • 2 egg yolks
  • 1/2 cup grated parmesan cheese

  1. Heat the milk to almost boiling in a saucepan on the stove or in the microwave. Pour into a bowl and stir in the coffee. Let it steep for 10 minutes, then strain through a cheesecloth or coffee filter. You can also do this in a French press.
  2. Bring water to a boil for the pasta. Drop the paste into the water.
  3. Put the bacon in a frying pan and fry until it starts to crisp. Add asparagus and cook for 3 minutes.
  4. Put the pasta in the pan when it is just al dente. Cook for 2 minutes.
  5. Meanwhile, beat eggs, egg yolks, parmesan and coffee milk in a large bowl.
  6. Pour the contents of the pan into the bowl with the egg mixture. Stir well while the heat from the pasta turns eggs and cheese into a delicious sauce for the pasta.
  7. Serve with extra cheese and red pepper flakes.
